The Person

Candidates with passion and drive are sought for the role of General Manager in The Bleeding Horse Bar and Restaurant. The ideal candidate must have a proven record of success at senior management level and must be comfortable working in and having oversight of a large-scale, fast-paced food and beverage operation within Dublin city center. Excellent numeracy skills, comfort with, and knowledge of profit and loss accounts, reporting and margin/productivity analysis are vital.

The chosen candidate must be committed to increasing the standard of service and have the ability to motivate their team to deliver this excellent level of service at every given opportunity.

Salary: DOE

The Role

The role is to support the Area Manager in leading the bar, restaurant and kitchen teams in service, menus, standards and training and to be responsible for the successful management and in particular the development of the business. In partnership with senior management, you will be responsible for leading the development of the brand and corporate and group bookings business. You will also be responsible for helping to maintain margins and assisting with reporting and analysis to achieve operational budgets.

Principle Duties and Responsibilities:

· Prepare weekly payroll and rosters

· Schedule and conduct weekly meetings with staff

· Prepare weekly reports for head office

· Maintaining food and beverage costs to appropriate levels

· Event management

· Management of Finances and budgeting

· Health and safety compliance and training

· Human resources training and compliance

· Observation and management of alcohol and other licences

· On-floor management of teams and day-to-day operations

· Product delivery and quality control

· Security management

· Stock control management and reporting
